Goat Cheese, Mango and Walnut Salad
One Week Plan: Goat Cheese Salad

Ingredients
  • 1 leaves head leafy green lettuce separated, washed and dried
  • 1 bunch arugula coarse stems removed, washed and dried
  • 1 ripe mango peeled and cut into about 16 slices
  • 4 ounces mild goat cheese crumbled
  • 1-1/2 tablespoons Silver Palate Vinegar Balsamico Salad Splash or other salad dressing
  • 1 tablespoon Silver Palate Mango Chutney
  • 1 tablespoon low-fat plain yogurt
  • 2 teaspoons Silver Palate Dijon Mustard or other mustard
  • 1/4 cup walnut oil
  • 1/2 cup chopped walnuts
  • Freshly ground black pepper to taste
