Grain Berry Pecan Waffles
One Week Plan: Breakfast Waffles

Ingredients
  • 2 cups Grain Berry Pancake & Waffle Mix
  • 1/2 cup of chopped pecans
  • 1 large egg
  • 1 cup low-fat milk
  • 1/2 cup buttermilk or 1/2 cup milk with 1 tablespoon lemon juice
  • 2 teaspoon vanilla extract
  • 2 tablespoons unsalted butter or margarine
  • 1/4 cup ¼vegetable oil
  • maple syrup for topping

Ingredients
  • 2 cups Grain Berry Pancake & Waffle Mix
  • 1/2 cup of chopped pecans
  • 1 large egg
  • 1 cup low-fat milk
  • 1/2 cup buttermilk or 1/2 cup milk with 1 tablespoon lemon juice
  • 2 teaspoon vanilla extract
  • 2 tablespoons unsalted butter or margarine
  • 1/4 cup ¼vegetable oil
  • maple syrup for topping
One Week Plan: Breakfast Waffles
Instructions
  1. Roast the pecans in the oven at 350° F, 5-7 minutes or until toasted. Whisk the egg, milk, buttermilk and vanilla together in a large bowl. Stir the egg mixture, melted butter and vegetable oil into the Grain Berry Pancake & Waffle Mix until just combined. (Batter may be lumpy). Preheat a waffle iron and brush with melted butter. Ladle about ½ cup of batter (varies by size of waffle iron) into the iron and sprinkle in 2 tablespoons of toasted pecans. Cook until golden brown. Top with butter or margarine and syrup, and enjoy!
